This is another old family favourite that I improved with a cream and chocolate icing. Crush the biscuits to your desired texture, large for extra crunch or small for a smoother finish. Keep a pack of milk biscuits in the cupboard and this is an easy snack for when the shops are closed or just too damn hard to get to. The base slice is wonderful alone, top it with chocolate icing mixture or go glorious and try the chocolate and cream icing!
Ingredients (double this part for a thicker and more impressive slice):
- 1 packet of Milk Arrowroot/Marie Biscuits
- 125g Butter
- 1/2 cup caster sugar
- 1/4 cup cocoa
- 1 egg
- 125g chocolate
- 3/4 cream
Place butter, sugar and cocoa in a large saucepan.
Melt and mix over low heat.
Remove from heat and allow to cool.
Use a pulse setting on your blender to break up the biscuits into large crumbs or empty biscuits into a cloth bag and smash them with a rolling pin.
Grease and line a slice tray.
Add the egg and biscuits to the saucepan and mix.
Place over a low heat to aid mixing process.
Remove from heat and press into the tray.
Place in fridge to set.
To make a glorious chocolate topping place cream and chocolate in a bowl and set aside, you want the cream to be close to room temperature before heating.
Heat carefully on low, stirring continuously. Freely move it on and off the heat to keep the mixture from bubbling.
When all the chocolate is melted pour over the slice and spread to edges.
Return the slice to the fridge.
